Street Style Loni Sponge Dosa

Ingredients- Rice 3 Cups Urad Dal 1 cup Fenugreek Seeds 1/2tbsp Coconut 1 cup Peanuts 1/2 cup Curd 1 cup Coriander leaves 1/2 cup Cumin Seeds 1tsp Green chilies 6-7 Garlic Cloves 4-5 Sugar 3tbsp Asafoetida Mustard seeds 1tsp Curry leaves Red dry chilis 3-4 Kanda Lasun Masala White Butter Oil Water Salt to taste Procedure- Thoroughly wash rice and urad dal in 2 separate bowls. In rice bowl add water one inch more than rice and in urad dal add double the amount of water and add fenugreek seeds. Soak the Rice and urad dal for atleast 4-5 hrs. in a mixer jar add both urad dal and rice and make a smooth paste add salt and leave the paste over night for fermentation. Next day on a flat pan on low flame put the rice paste and spread in a thick dosa and sprinkle the kanda lasun masala on the dosa . let the dosa cook then put the white butter on the dosa and flip the dosa. Flip again and let the dosa become crispy. In a mixer jar add coconut, peanuts, coriander, green chilis, Curd, sugar, salt, cumin seeds, and garlic cloves. Make a fine paste and put the chutney in a bowl. in a small wok add oil let it heat then add asafoetida , Mustard seeds, curry leaves, and red chilis. Add this to the chutney and mix well.
