Today, we're making breakfast! My first time making Turkish eggs and won't be the last. Served with a side of crusty sourdough + some sav blanc. Amazing. This is hardly a recipe, but ... Mix ~ 2 cups greek yogurt with a handful of chopped mint, parsley and dill, a squeeze of lemon and some salt. Then melt 4 tbsp butter and get it foamy. Add 2 tbsp EVOO and 1 tbsp Aleppo pepper and stir to combine. Take it off the heat to cool and infuse. :) To poach the eggs, I used the strainer method. Used the freshest eggs I had, cracked one at a time into a sieve and lowered into simmering water. I also made a cyclone with the water after popping them in, though in hindsight I would start the cyclone before. Move around for a few minutes and then remove w slotted spoon and drain. To serve, dollop some yogurt, top with eggs, drizzle with Aleppo butter, and sprinkle with some flaky salt. Warm + crusty sourdough on the side. Mmmm. Enjoy! Thanks so much for watching, guys!
