Matcha Orange & Cashew Tea Cookies Matcha green tea, citrus, and cashews. The sweetness of the citrus and the nuttiness of the cashews even out the bitterness of the matcha. These cookies pair with an herbal tea and berries. Serves 10 Ingredients: 1 ½ cups all-purpose flour 1 tablespoon cornstarch 2 tablespoon organic orange peel 4 teaspoons organic matcha powder 2 egg replacers ½ tespooon baking soda ¼ teaspoon sea salt ½ cup coconut oil ½ cup vegan agave ½ cup organic brown sugar 1 teaspoon orange extract ½ cup filtered water 1 cup of raw cashews, to place on the top Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside. Combine the dry ingredients in a small bowl and fold. Set aside. In a large bowl blend the coconut oil, agave, brown sugar, orange extract, egg replacer and water until combined. Slowly add the dry ingredients to the wet ingredients and fold until the dough forms a tight consistency. Form tablespoon sided balls and press to make a flat shape. Place the raw cashews and some orange peel in the the cookies once they are rolled. Place on the cookie sheet and bake for 10- 12 minutes. Remove from the oven and let cool. Serve with tea.
