This recipe is a perfect alternative to store-bought noodles as it contains No Maida and No Preservatives. The highlight of this dish is our Signature 100% Homemade Tomato Sauce, crafted with fresh ingredients and a hint of traditional flavors to give you that perfect tangy-sweet balance. Watch us cook in a serene, natural setting as we transform simple wheat dosas into a vibrant, veggie-loaded meal. Whether you are looking for a healthy breakfast for your kids or a unique twist to your daily meal, this recipe is for you! [INGREDIENTS]: For Dosa: 250g Wheat Flour, Salt to taste, Coconut Oil. For Sauce: 4 Tomatoes, 4 Garlic cloves, 2 Dry Red Chillies (de-seeded), Tamarind (size of 2 seeds), 4 tsp Sugar, 1 tsp Coconut Oil, a pinch of Salt, 1/4 tsp Corn flour (optional). For Sautéing: 2 Carrots, 10 Beans, 7 Red Cabbage leaves, 1 Capsicum, 2 Green Chillies, Ginger & Garlic (finely chopped), 1 Tomato, 2 Eggs, Curry leaves, Coconut Oil. [STEP-BY-STEP METHOD]: 1. Preparing Homemade Tomato Sauce: Boil 4 tomatoes, peel the skin, and blend with garlic, de-seeded red chillies, and 2 seeds-sized tamarind. Pour the paste into a large, deep, heavy-bottomed pan to avoid splattering. Add sugar, a pinch of salt, and 1 tsp coconut oil. (Optional) Add 1/4 tsp corn flour slurry for a glossy finish. Simmer until thick. 2. Making Dosa Noodles: Mix wheat flour, salt, and water into a smooth batter. Make thin dosas using Coconut Oil. Important: Let the dosas cool individually in open air. Do not stack them while hot to keep them crispy. Roll the cooled dosas and slice them into thin strips (noodles). 3. Stir-Frying: Heat coconut oil in a pan. Sauté ginger, garlic, green chillies, and curry leaves until golden brown. Add all chopped veggies and salt. Sauté on medium-low flame without adding water until 75% cooked. Crack the eggs, scramble them well with the veggies, and then add your homemade tomato sauce. Finally, toss in the dosa noodles, mix gently, and serve hot!
