When I tell you that you've got to try this Smoked Mexican Chicken, I'm not kidding! This may be one of the top 5 chicken recipes that I've ever made - and the secret is in the fantastic combination of the injectable marinade and the homemade Mexican seasoning blend! Start by spatchcocking and dry brining a whole chicken overnight. The next day, make the simple 3 ingredient marinade and inject the bird with it. Then, mix up a simple Mexican seasoning and season the chicken. Smoke it at a low temp (we did 180 on the super smoke mode on the Weber Searwood) for one hour, then bump up the temp to about 325 to finish cooking.
