Farmhouse Sheet Pan Hash (Make-Ahead Friendly): This hearty “hash” is a farmhouse favorite—simple, adaptable, and full of flavor. It’s perfect for busy nights or lazy weekends, and you can make it ahead to save even more time. Ingredients: 4 russet potatoes, cubed (about 3 cups) 2 sweet potatoes, cubed (about 3 cups) 1 smoked sausage link (such as kielbasa), sliced 1 bell pepper, chopped 1 small onion, chopped Optional: chopped garden peppers (like banana peppers) or any veggies you have on hand Avocado oil All-purpose seasoning or seasoning salt Instructions – Oven Method: Preheat oven to 425°F. On a parchment-lined sheet pan, toss all ingredients with a drizzle of avocado oil and your seasoning of choice. Roast for 30–40 minutes, flipping halfway through, until the potatoes are golden and tender. Stovetop Method: Heat oil in a large skillet over medium heat. Add all ingredients and cook, stirring occasionally. Cover with a lid partway through cooking to help the potatoes soften faster. Cook until everything is tender and browned (about 20–25 minutes). Make-Ahead Tip: You can prep this hash ahead of time by combining all ingredients in a freezer-safe bag. Add oil and seasoning directly into the bag and toss to coat—easy, mess-free prep! Store in the freezer for up to 2 days before cooking (potatoes may begin to brown if stored too long). Cook straight from frozen or thaw overnight in the fridge before roasting or sautéing. Quick coleslaw for loaded baked potatoes: Ingredients: ½ cup mayonnaise ½ cup plain Greek yogurt 2 tsp apple cider vinegar ½ tsp celery seed ¼ tsp onion powder ¼ tsp garlic powder Salt & pepper, to taste 3–4 cups shredded tri-color cabbage mix (or to your desired texture) Instructions: In a large bowl, whisk together mayo, Greek yogurt, apple cider vinegar, and seasonings. Add shredded cabbage and mix until fully coated. Chill until ready to serve. Use as a side dish or pile it high on top of baked potatoes with BBQ beef and extra BBQ sauce! YUM!
