Egg Bites (Greek and Italian Style) Makes 4 servings - 5-6 egg bites per serving (1 leanest/lean, 1 1/2 healthy fats, 3 greens, 2 condiment) For each style, you can make the full recipe or cut all in half to make a smaller batch. Preheat oven to 375 and spray 20-24 muffin cups (or use silicone liners) Greek-Style Egg mixture: 3 c. egg whites/egg beaters (3 leanest) 4 oz. part skim mozzarella (1 lean) 1 1/2 t. olive oil (1 1/2 healthy fats) 1/4 t. salt (1 condiment) Whisk all together. In a separate bowl, mix: 3 C. frozen chopped spinach, thawed and squeezed well of moisture (6 greens) 3 C. frozen cauliflower rice, thawed and squeezed well of moisture (6 greens) 3/4 C. feta cheese, reduced fat (6 condiments) 1/2 t. black pepper (1 condiment) Italian-Style Egg mixture: 3 c. egg whites/egg beaters (3 leanest) 8 oz. part skim ricotta (1 lean) 1 1/2 t. olive oil (1 1/2 healthy fats) 1/4 t. salt (1 condiment) Whisk all together. In a separate bowl, mix: 3 c. (19.44 oz) frozen chopped broccoli, thawed and squeezed well of moisture (6 greens) 3 c. (12 oz. with skin) shredded raw zucchini, squeezed well of moisture (6 greens) 1/2 t. pepper (1 condiment) 1/2 t. garlic powder (1 condiment) 1 t. oregano (1 condiment) 1/2 c. parmesan, reduced fat (4 condiments) For both options, add egg mixture to the vegetable mixture and mix all well. Divide between the muffin cups using 20-24. Bake for 20-25 minutes until cooked through.
