What is a Hawk-bill knife used for? A hawkbill shape resembles its namesake, a hawk's beak, with a sharp downward curve. The inner curve is the one that is sharpened, and the spine is left dull, which allows you to place a finger to guide it. It's typically used for cutting and slicing, and the sharp point can be used to pierce materials. When was the Hawkbill knife invented? Called a “single blade pocket knife” by collectors, the marks on this bone-handled knife date it to the years 1920-40. It certainly dates before World War II. And it was made by one of America's most prestigious knife firms. Case Brothers Cutlery was founded in 1889 at Little Valley, near Buffalo, in western New York.
