Chicken Chowmein Recipe Ingredients For the Chicken: • Boneless chicken – ½ kg, cut into cubes • 1 tbsp soy sauce • 1 tbsp vinegar • 2 tsp black pepper • 1 tsp salt • 4–5 tbsp cornflour • 1 egg • 1 tsp chili flakes • ½ tsp ginger garlic paste (or ginger & garlic powder) • Oil – ¼ cup (for deep frying) For the Sauce: • 6 tbsp soy sauce • 5 tbsp vinegar • 4 tbsp hot sauce • 4 tbsp oyster sauce • 4 tbsp chili garlic paste • 2–3 tsp sugar • 2–3 tsp chili flakes • Salt to taste • Black pepper – 3 tsp Vegetables & Noodles: • Capsicum – 2, sliced • Carrots – 2, sliced • Green chilies – as desired, sliced • Spring onions – for garnish • Spaghetti/noodles – 1 packet enough for 6-7 servings • 1 tbsp oil (for stir-frying vegetables) • 1 tsp ginger garlic paste ⸻ Method 1. Prepare the Chicken: • In a bowl, mix chicken strips with 1 tbsp soy sauce, 1 tbsp vinegar, 2 tsp black pepper, 1 tsp salt, 4–5 tbsp cornflour, 1 egg, 1 tsp chili flakes, and a little ginger garlic paste/powder. • Mix well to coat the chicken evenly. • Heat oil in a pan and deep fry the chicken until light golden. Set aside. 2. Cook the Noodles: • Boil water in a pot with a pinch of salt. • Add spaghetti/noodles and cook until just tender (don’t overcook). • Strain and set aside. 3. Prepare the Sauce: • In a bowl, combine 6 tbsp soy sauce, 5 tbsp vinegar, 4 tbsp hot sauce, 4 tbsp oyster sauce, 4 tbsp chili garlic paste, sugar, chili flakes, black pepper, and salt. Whisk well. 4. Stir-Fry Vegetables: • In a wok or large frying pan, heat 1 tbsp oil. • Add 1 tsp ginger garlic paste and sauté briefly. • Add sliced capsicum, carrots, and green chilies. Stir-fry on high flame for 2 minutes. 5. Combine: • Add the prepared sauce to the vegetables and cook for 1–2 minutes. • Add the cooked noodles and toss well to coat with the sauce. • Finally, add fried chicken and spring onions. Mix gently. 6. Serve: • Transfer to a serving plate and enjoy hot, flavorful chicken chowmein!
