In this video, W Villadorata's Executive Chef Matteo takes you on a culinary journey as he demonstrates the art of creating one of the most luxurious pasta dishes I've ever tasted. Chef Matteo and his team taught us how to make tagliolini with pistachio pesto, smoked fish stock, fresh orange zest, and bottarga. The pistachio pesto is made using Sicilian pistachios, a local staple. The handmade pasta made with egg yolks makes for the perfect balance of chewy and tender noodles. However, the magic happens when the chef lends an exquisite touch by adding thin slices of the luxurious bottarga, a delicacy made from salted, cured fish roe. The delicate shavings of bottarga elevate the dish, providing a burst of umami and earthy salty flavors. The dish also represents many of the classic flavors of Sicily: pistachios, oranges, olive oil, and fish.
