Salted caramel apple cheesecake bars ♡ Before starting the salted caramel read the notes below! 🍂 GRAHAM CRACKER CRUST 1 and 1/2 cups (180g) graham cracker crumbs (12 sheets) 6 tbsp (85g) melted butter (salted or unsalted) 1 tbsp sugar ♡ Pack firmly into a 9x9 inch pan lined with parchment paper ♡ Bake at 350F (177C) for 10 minutes 🍂 CRUMBLE 3/4 cup + 2 tbsp all-purpose flour 1/2 cup (100g) sugar 3 tbsp dark brown sugar 1/2 tsp vanilla extract 1 tsp cinnamon 6 tbsp (85g) melted butter (salted or unsalted) 1/3 cup (35g) rolled oats ♡ Mix with a fork and place in the fridge while making the cheesecake 🍂 APPLE MIXTURE 2 medium apples diced 1 tbsp lemon juice 4 and 1/2 tbsp brown sugar (While editing, I realized I actually used 4 and 1/2 TSP of brown sugar! They still turned out amazing but I usually use 4 and 1/2 tbsp. Either will work!) 1 tsp cinnamon 1/4 tsp nutmeg 1/8 tsp salt 🍂 CHEESECAKE 16oz softened cream cheese 1/2 cup (100g) sugar 1/2 cup (120g) sour cream 2 tsp lemon juice 2 eggs 1 tsp vanilla extract ♡ Bake the assembled cheesecake at 350F (177C) for 35-40 minutes ♡ Let it cool completely at room temperature and then refrigerate for at least 4 hours before slicing 🍂 SALTED CARAMEL Make sure you have all your ingredients ready to go before beginning! 1 cup (200g) sugar ♡ Constantly mix over medium heat until the sugar is completely melted- it'll look crumbly before it starts melting! 6 tbsp (85g) room temperature butter ♡ Whisk until the butter is completely melted and incorporated 1/2 cup (120ml) warmed heavy cream ♡ While whisking, slowly pour in the heavy cream ♡ After the heavy cream is incorporated, stop whisking and let it boil for 1 full minute ♡ Turn off the stove and mix in 1 tsp salt ♡ Transfer to a jar or bowl and let it cool for about 20 minutes :) It will thicken as it cools 📝 NOTES ♡ Every stove is different! If you notice your caramel browning too quickly, keep your heat on low instead of medium ♡ Your cheesecake should be jiggly in the middle straight out of the oven. Once the edges are set and the crumble looks golden, they should be done :) ♡ Be sure not to over bake your cheesecake or it'll be crumbly!
