00:00 Strawberry Chocolate Butter Sandwich 00:21 Make the cocoa cookies 01:44 Make the sandwich cream 02:57 Use dried strawberries 04:30 Cut out with square mold 05:14 Idea for removing stems from fresh strawberries 07:17 Cut the cream 07:29 Sandwich the cream between cookies 07:56 Finished I made a luxurious sandwich cookie using double strawberries. The cookie is baked with slices of fresh strawberries on top, and sandwiched between them is a delicious cream made from white chocolate and butter mixed with dried strawberries. This is absolutely delicious. One is enough to satisfy you with this luxurious sandwich cookie. Recipe (Makes 7 cookie sandwiches) For the cocoa cookies 115g cake flour 15g cocoa powder 30g powdered sugar 80g unsalted butter 25g whole eggs For the sandwich cream 150g unsalted butter 150g white chocolate 7g dried strawberries 12 strawberries 4g granulated sugar How to make: Make the cocoa cookies 1.Put 115g of cake flour, 15g of cocoa powder, and 30g of powdered sugar into a food processor and mix roughly. 2.Add 80g of unsalted butter cut into small pieces and mix until smooth. 3.Add 25g of whole eggs and mix until combined. 4.Roll out the mixture to a thickness of 3 mm and let it rest in the refrigerator. Make the sandwich cream 5.Knead 150g of room temperature unsalted butter until soft. 6.Melt 150g of white chocolate. The best temperature for the chocolate is 30°C. If it's too hot, the butter will melt when you combine it, so be careful. 7.Add (6) to (5) and combine.Mix well until there are no lumps of butter. 8.Add 7g of dried strawberries, breaking them into large pieces with your hands. Mix roughly. 9.Wrap the mixture in baking paper and flatten.I used the depth of the baking tray to roll out the cookie dough to a thickness of 2.4cm. Chill in the refrigerator. I recommend using the freezer. 10.Cut out (4) into shapes or cut to your desired size. This time, I chose 4.5cm squares to match the size of the strawberries I would be putting on top. Place the cut-out cookie dough on a baking sheet. I made 23 pieces. 11.Slice the strawberries with the stems removed into slices about 5mm thick.I used the two middle slices, which had the best shape. 12.Place just under 80g of sliced strawberries on a paper towel. 13.Sprinkle 4g of granulated sugar on top and leave for 10 minutes. 14.Press with paper towel to remove any excess moisture. 15.Place the strawberry slices on top of the cookie dough (10). 16.Bake in a preheated oven at 150°C for 30 minutes. 17.Allow to cool when baked. The size of the baked cookies had shrunk to 4.4cm. 18.Cut (9) and sandwich between the cookies.Once the remaining cream has softened, gather it together, flatten it, cool it, cut it, and repeat the process. You should have 7 cookie sandwiches in total. 19.Done.I'm very satisfied with my cookie sandwiches.
