Tip: Ensure gelatin is completely dissolved to avoid lumps. Crepe Steps ① Whisk eggs and fine sugar until sugar dissolves. ② Mix low-gluten flour and cactus fruit powder, then add to egg mixture and stir evenly. ③ Gradually add milk and melted butter, mix until no dry flour remains. ④ Add 1-2 drops of red velvet essence to adjust batter color. ⑤ Strain batter twice and let rest for 30 minutes to remove bubbles. ⑥ Ladle batter into pan, cook over low heat until large bubbles appear, then flip to cool. Tip: Maintain low heat to prevent burning.
