Recipes in this weeks video: Pesto recipe: ½ cup walnuts Juice of 1 lemon 2 garlic cloves Dash of salt Dash of pepper 2 cups basil leaves ¼ cup olive oil 1 tbsp of water ¼ cup of parmesan or nutritional yeast Directions: blend everything together in a blender. Add starch water if desired for a thinner consistency. Potato and spinach curry: 4 potatoes peeled and chopped 1 onion chopped Dash of olive oil 4 cloves garlic minced 1 tablespoon of ginger grated 1 bag of spinach 2 teaspoons ground coriander 1 teaspoon ground cumin 1 teaspoon ground turmeric 1 teaspoon ground paprika 1 tablespoon of garam masala sea salt and pepper to taste 2 tablespoons coconut oil 1 can of coconut milk 1 tsp of lime or lemon juice directions : Boil potatoes in large pot for 20 minutes. Drain water and set aside. Heat oil in a large saucepan on medium-high heat. Add onions and cook until browned. Add garlic and ginger and cook for another minute, stirring constantly and then add spices. Stir in spinach and cook, stirring until wilted. Add coconut oil and coconut milk. Optional at this point to blend everything together with an immersion blender.
