Today's recipe is "Bolognese with Chuno Sauce". Chuno sauce is deliciously sweet, fruity, tangy, a veritable procession of spices, fruits and vegetables. It goes well with all kinds of fried dishes and great for salads, too. [Ingredients (for 2 servings)] 300g Ground beef 30g Pancetta 1/4 Onion 1 Garlic clove 1/3 Carrot 1/4 stalk of Celery 200cc Red wine 200g Canned tomatoes 1 Bay leaf 1 tbsp Chuno sauce Salt Pepper [Directions] Finely chop onion. *Easy with a food processor. Finely chop garlic. Take strips of celery and chop it. Peel and chop carrot. Chop pancetta. Add olive oil to a pan. Fry pancetta on a medium heat until golden. Fry garlic and onion. When onion becomes translucent, add celery and carrot and fry. Add salt. Tip! Adding salt makes it easier to stir as water comes out from the vegetables. Add ground meat and fry over high heat. When meat is browned, add red wine. Boil the liquid down to about 1/3. Add canned tomatoes and chuno sauce. Simmer on a low heat for about 10 minutes with a lid. When the liquid is reduced to about half, season with pepper. Ready to eat!
