Ingredients •80 g paneer (for two parathas) •Green chillies (as per your taste) •Salt (to taste) •½ tsp red chilli powder •A pinch of jeera (cumin) powder •Less than ¼ tsp garam masala •Less than ¼ tsp ajwain •¼ tsp coriander leaves •Plus: whole wheat flour, water, and a little oil or ghee for cooking Method: 1. Mix 1 cup whole-wheat flour with water. Knead into a soft dough, cover and rest 10–15 mins. 2. Crumble the paneer, chop green chillies, and combine with salt, red chilli powder, jeera powder, garam masala, ajwain, and coriander leaves. 3. Divide dough into two balls. Roll each into a small disc, place half the filling in the centre, seal the edges and roll out into ~6–7 inch parathas. 4. Heat a tawa, cook each paratha on medium heat: about 30 secs, flip, apply a little oil/ghee, press gently, cook until golden spots appear. Repeat on the other side. 5. Serve hot with yogurt, chutney or pickle.
