Welcome back to The Food Experience!! Today is a cooking experience Sunday! I using the Instant Pot and making long grain white rice & carrots cooked in chicken broth w/curry and topping it with butterflied chicken breast sauced and cooked with Hellfire & Brimstone Thermal Runaway sauce!! Here is the complete recipe: Ingredients: 2 Butterflied 1/2 chicken breasts 1 cup of rice 1 Diced carrot a few dashes of salt 1 TBSP of curry powder 1 TBSP butter 1 1/2 cups chicken broth Thermal Runaway hot sauce from Hellfire & Brimstone - though you can use any hot sauce that you like. The one I used has some super hot peppers along with curry. Cooking utensils used: Air Fryer Instant Pot Fork Spatula 1. Using a knife or food processor dice up 1 carrot 2. Measure 1 cup of rice and put it into a strainer. Rinse the rice for at least 1 minute under cold water until the water coming from the strainer looks clear. (Very important step!!) 3. Add 1 1/4 cups chicken broth to the Instant Pot 4. Add 1 TBSP curry powder to the Instant Pot 5. Add 1 TBSP butter to the Instant Pot 6. Add a few dashes of salt to the Instant Pot 7. Add enough carrots so that it is the ratio you would like with the rice 8. Close and seal lid on the Instant Pot. Make sure the release is in the closed position 9. Use Manual pressure cook on HIGH for 4 minutes 10. Turn on and set your air fryer to 360 degrees 11. Baste on some Thermal Runaway (or your favorite hot sauce) on both sides of the chicken. 12. When the Instant Pot shows 1 minute of remaining cooking time place the chicken in the air fryer basket and insert into the air fryer. Let cook for 6 minutes. After 6 minutes flip the chicken and cook another 6 minutes. Remove from air fryer when complete and place on cutting board. 13. After the Instant Pot is finished cooking let the natural release count up to 10 minutes then use the quick pressure release valve. (make sure to use a glove to avoid getting sprayed with hot steam.) 14. After the pressure is released from your Instant Pot, open up the lid. Use a fork and comb out the rice to ensure it is nice and fluffy. Spoon rice & carrots onto a plate 15. Cut chicken into small peices, almost diced but a bit larger and place on top of the rice.
