COOKING: We wanted perfect results on both low and high settings and in recipes with lots of sauce or very little. We made chicken thighs in a hearty tomato sauce, a recipe that has plenty of liquid and cooks on high for 3 to 4 hours. Next, we made smothered steaks for two, which braise for 4 to 5 hours on high with a moderate amount of liquid. Then, we ran an extreme test: sweet-and-sour sticky ribs for two. This dish cooks on low for 7 to 8 hours with very little moisture. MAXIMUM TEMPERATURE: We recorded the temperature of each cooker while heating 2½ quarts of water for 6 hours, first on high and then on low. DESIGN: We liked dishwasher-safe inserts with large, easy-to-grip handles. We compared the usability of manual versus digital programmable controls. America's Test Kitchen is the most-watched cooking show on public television—up to 2 million viewers watch each episode. The show is filmed in the test kitchen of Cook's Illustrated magazine, located just outside Boston. Each episode features recipes we've carefully developed to make sure they work every time. The test cooks solve everyday cooking problems, test equipment so you never have to waste money on things that don't work, and taste supermarket ingredients to save you time in the store. It's a common-sense, practical approach you won't find on other cooking shows. Twitter:   / testkitchen   Facebook:   / americastestkitchen
