Thinly slice the onion and loosen the crab sticks by hand. 2. Heat the pan over medium heat and add the butter. 3. When the butter melts, add the onion and crab sticks. Fry until the onion is tender. 4. Reduce the heat to low and add the sake and rice flour. 5. Fry, stirring constantly, until the rice flour thickens into a paste. 6. Add the milk to the pan in 3 separate additions, frying and mixing well each time until the mixture is smooth and creamy. 7. Turn off the heat, add the stock, and mix well. 8. Let the filling cool slightly, then wrap the filling in the spring roll wrappers. 9. Fry the spring rolls until they are golden brown. --- Fluffy Japanese Crab Omelette Camfire Cooking Episode 13 INGREDIENTS: *Omelette:* 3 eggs 1/2 cup crab (or chopped imitation crab) Salt and pepper to taste *Sauce/Gravy:* 1 cup chicken broth 2 Tbsp light soy sauce 1 to 2 Tsp rice vinegar 1 Tsp sake 1 to 2 Tsp sugar 2 scallions, thinly sliced 1.5 Tbsp corn starch (for thickening) Salt and pepper to taste METHOD: Prepare the Sauce: 1. In a pot, whisk together all sauce ingredients (broth, soy sauce, vinegar, sake, sugar, corn starch, salt, and pepper). 2. Cook over medium heat for about 5 minutes, stirring occasionally, until the sauce is fully heated and has thickened into a gravy. Make the Omelette: 3. In a bowl, mix the eggs and crab, seasoning with salt and pepper. 4. Add 1 Tbsp oil to a pan over medium heat. 5. Pour the omelette mixture into the pan. 6. Gently push the edges of the omelette mixture inward toward the center until most of the egg has cooked. 7. Cover the pan with a lid to help the omelette cook through completely. 8. Drizzle 1 Tsp of sesame oil over the omelette. 9.
