Mix together starter, warm water, and olive oil. 2. Add flour and salt, and mix all together into a dough. 3. In a mixing bowl, let the dough prove for 1 hour with a wet paper towel placed over the bowl. 4. After 1 hour, pull and fold the dough 3 times. 5. Pick up the dough and form a rough ball, pull the dough to one side of the ball so the other side is smooth. (Tip, dough will stick to your hands less if your hands are wet) 6. Place the dough back in the bowl, smooth side up and lightly cover the dough in olive oil. 7. Place the wet paper towel back over bowl. 8. Allow dough to prove for 8-12 hours (longer prove = puffier bread) 9. After 8-12 hours, prepare your baking pan by rubbing a bit of flour or cornmeal on the surface of the pan. 10. Pull and fold dough 3 times. 11. Pick up the dough and form a ball, pull the dough to one side of the ball so the other side is smooth. Place the dough in your baking pan smooth side up and lightly cover in olive oil. 12. Cover with the wet paper towel. 13. Set a timer for 50 minutes. 14. Have the dough prove for 1 hour. 15. When the timer goes off preheat your oven for 200°C and place an oven safe pan with water on the lower shelf of your oven. 16. Set a timer for 10 minutes. 17. At the end of 10 minutes / when the over is preheated, remove the paper towel from the dough and use a sharp knife to slice a 1cm - 2cm deep line down the centre of your dough. 18. Sprinkle a pinch of salt on top of the dough. 19. Place the dough in the oven for 50 minutes. 20. When the timer goes off remove the bread from the oven, place the bread on a cooling rack and allow the bread to cool for 1-2 hours* (Tip, this step is important, cutting into the bread too soon after taking it out of the oven can cause it to deflate). *if your crust is too hard, next time try placing a tea towel over the loaf as it cools.
