It’s simple, quick, and perfect as a snack or light dessert Ingredients (for 3–4 persons) • Wheat flour (atta) – 1 cup • Jaggery (gur) – ½ cup (grated or powdered) • Water – ¾ to 1 cup (as needed for batter) • Fennel seeds (saunf) – ½ tsp (optional, for flavor) • Cardamom powder – ¼ tsp (optional) • Ghee or oil – for shallow frying Method 1. Prepare Jaggery Syrup o Heat ½ cup water in a pan. o Add grated jaggery and stir until it melts. o Strain to remove impurities and let it cool slightly. 2. Make Batter o In a mixing bowl, add wheat flour. o Slowly add the lukewarm jaggery water and whisk to make a smooth, lump-free batter. o Adjust thickness like dosa batter (not too thin, not too thick). o Add fennel seeds and cardamom powder. Mix well. 3. Cook Chilla o Heat a tawa (griddle) and grease with a little ghee. o Pour a ladleful of batter and spread gently into a round chilla (like pancake). o Cook on medium flame with ghee on edges until golden brown on one side. o Flip and cook the other side till crisp and cooked. 4. Serve o Serve hot with white butter, fresh cream, or just as is! Tips • If you want softer chilla, make the batter slightly thick.
