Spring is on its way! 🌿 Even though it’s not here just yet, I’m starting to plan what to grow on my allotment (just in my notebook for now!). I'm also baking vegetarian chocolate chip muffins for my nephews (they would have been vegan but I forgot to check the chocolate chips for milk), and making a cozy creamy vegetable soup for lunch. After that, I plant a Golden Pothos cutting from my mom and swap out my winter coats for lighter spring jackets. Recipe: Chocolate banana muffins, 12 pcs: ( I made half the dough) 1 ripe banana 1 dl water 0.5 dl mild-flavored oil (such as regular canola oil) 0.5 dl peanut butter (you can omit it) 1.5 dl sugar 2 tsp vanilla sugar 0.5 tsp salt 1 tsp baking powder 0.5 tsp baking soda 2.5 dl wheat flour 75 g dairy-free chocolate 1. Preheat the oven to 190 degrees. Prepare the muffin tins by filling the muffin tins with muffin liners, spreading the sturdy tins on a baking tray or placing two paper tins on top of each other. 2. Peel and mash the banana. Mix the banana puree, water, oil, sugar, vanilla sugar and salt. Sift in the baking powder, baking soda and wheat flour and mix until smooth. Cut the chocolate into small pieces with a sharp knife and add it to the batter. 3. Divide the batter into the tins and bake on the middle shelf of the preheated oven for approx. 20 minutes. The muffins are ready when a skewer inserted into them comes out clean. 4. Let the muffins cool for a while before eating them. If the muffin is still hot, it may not come off the paper. However, the paper will come off the cooled muffins easily. Store the finished muffins in an airtight container either at room temperature or in the refrigerator. Muffins can also be frozen.
