Katayef Ingredients: 1. 3 1/2 cups of warm water 2. 1 1/2 c of fine semolina 3. 1 1/2 cup flour 4. 2 tablespoons sugar 5. 1 1/4 tsp baking powder 6. Half a teaspoon yeast In a blender add in the ingredients. At this point if you want you can add in a tsp of either orange blossom water, rose water or vanilla. I added orange blossom. But that’s completely optional. Let the mix rest in the blender for 15 minutes. Preheat a nonstick skillet on the stove on medium heat. I do not recommend using a griddle at all, just Bc I don’t have good luck with katayef on it. Pour the batter into a teapot, yes tea pot. Pour the desired size a katayef into the skillet and wait for the top to dry. The top should be nice and bubbly but not raw. Place the cooked the katayef flat smooth side down on a towel while you cook the other ones. as they start to cool you can put them bubbly side facing each other covered with a towel. Once they have cooled feel free to fill them with whatever you prefer. I like to fill mine using a mixture of sweet cheese and whole milk mozzarella, sprinkle of sugar and a splash of orange blossom water. I close them like a crescent, and freeze them not touching for atleast an hour. This ensures them not to open or crack. I pan fry them on both sides in canola oil. Once they are nice and golden I dip them in simple syrup and I serve them hot. Sahtain! Cookwithdena
