These attractive ice cream cones are very easy to make, popular amongst children and for fans of the minnie mouse and kitty. Excellent for children parties or birthdays. Ingredients: 1. Muffin baking tray for cupcakes 2. Box of confetti cake mix 3. Classic vanilla frosting (brought from supermarket) or use home made buttercream 4. Ice cream cones flat bottom 5. Mini oreos 6. Black, white and pink (or red) writing icing 7. Black and yellow jelly beans 8. Rainbow roll-ups 9. White mini marshmallows 10. Licorice roll 11. Toothpicks, cup cake cases, baking spray Method: 1. In a mixing bowl combine confetti cake mix according to the instructions on the box. 2. Line your muffin trays with cupcake cases and spray them generously with cooking spray. 3. Divide the batter into the baking cupcake cases. Only fill them half way full. Just fill the cups half way full, instead of 2/3 of the way full. 4. Stack the ice cream cones on top of the batter. Bake at 350F (180C) for about 13-15 minutes being careful not to let the batter burn. 5. Remove the cake cones from the oven and let them cool completely. 6. When you are ready to frost them, carefully remove the cupcake case. If cup cakes bigger then your ice cream cone simply remove excess with a sharp knife around ice cream cone. 7. For minnie mouse: frost the ice cream cake cones (If using home made buttercream frosting use as it is; if using frosting brought from supermarket you may tint it with ivory gel food coloring if you like). Then use a toothpick to outline patterns of minnie mouse; apply black writing icing on outline pattern to create look of minnie mouse; use mini oreos for ears; place black jelly bean for nose; apply white writing icing for eyes; apply black writing icing to create mouse, eyes, eyelashes and pupils of the eyes; use pink or red writing icing for tongue. Use kitchen scissors to cut red color strip from rainbow roll-ups; trim to shape of bow and squeeze together to create bow of minnie mouse; place it on top of ice cream cake cone, apply white writing icing to create white dots. 8. For kitty: frost ice cream cake cones with home made buttercream frosting or brought from supermarket; cut white mini marshmallow on half and place on top of ice cream cake cone to resemble ears of kitty; place yellow jelly bean for nose; cut with kitchen scissors strips of licorice and place for whiskers; use black writing icing to create eyes; cut strip of red rainbow roll-ups, trim edges to slightly round, squeeze together to make a bow and place on ice cream cake cone.
