Bon Bon Grape Hand Pies 葡萄酥皮派 | 포도봉봉 | ASMR Baking Therapy

Hands up who loves artificial grape flavour. 🙋‍♀️ I only knew of artificial grape flavours growing up. There was not an ounce of real grapes in those Asian foods. Hichew? Grape soda? Japanese grape gummies? All artificial. So when I made these grape hand pies, I knew I needed that secret ingredient. I was actually looking for this Japanese grape soda that I drank growing up, but I could only find this Bon Bon grape juice at the Asian grocery store. It worked beautifully with my flaky and crispy pastry pie recipe. I’m officially a pastry matchmaker. 💏 These are SO CUTE to make. 🥺🥺🥺 The moment I pressed the little pies down with my fork, I went into zen mode. 🧘🏻‍♀️🧘🏻‍♀️🧘🏻‍♀️ And yes, I ate all these myself within 3 days. You can find details of the recipe here:   / cl9up-fhfrb   Follow BreadyButter on IG for more weekly recipes:   / breadybutterrecipes   --------------- Ingredients (Makes 20) ▶ Pastry 210g plain flour ¼ tsp fine sea salt 2 tbsp sugar 155g unsalted cold butter 70g ice water ▶ Grape Filling 400g seedless red grapes (1 packet) 30g sugar 15g lemon juice 60g maltose sugar 200g grape juice/grape soda 15g unsalted butter ▶ Egg Wash 1 egg 1 tbsp milk ▶ Decorate Demerara sugar --------------- Method Pastry 1. Cut 155g unsalted cold butter into small cubes. 2. Mix 210g plain flour, ¼ tsp fine sea salt, and 2tbsp sugar with your cubed butter together to form a lumpy mix. 3. Add 70g of ice-cold water and mix until a dough forms. 4. Divide the dough into two and wrap it with cling film. Place it in the fridge for 1 hour. Grape filling 1. Blend your grapes into a pulpy juice and transfer to a saucepan. Boil on high heat. 2. Add 30g sugar, 15g lemon juice, 60g maltose sugar, and 200g grape juice/soda into the saucepan with your boiling grape juice. 3. Cook until thickened and take off the heat. 4. Add 15g of unsalted butter into your jam and mix. 5. Leave cool before you wrap it with cling film. Place in the fridge for 20 minutes. Egg wash 1. Beat together 1 egg and 1 tbsp of milk. Assembly 1. Roll out your pastry dough into 4mm thickness. Cut out discs that are slightly bigger than the length of your ½ tablespoon. 2. Lay half of your discs on a baking tray and spoon ½ tablespoon of grape jam on them. 3. Brush your egg wash around the jam. 4. Place your top disc on the grape jam to make a sandwich. Using your fingers, press down the seams to close the pie. 5. Get a fork and press down the sides of your pie to seal your grape filling. 6. Place the pies in the fridge for 30 minutes. 7. Pre-heat your oven at 205C. 8. Brush your pies with egg wash and sprinkle demerara sugar generously on each hand pie. 9. Bake for 20 to 25 minutes until golden. --------------- Tips! ★ Make sure your ingredients to make the pastry dough are cold at all times! I try not to use my fingers because they’re too warm. ★ When you mix your flour with the butter, you still want the chunky butter bits, don’t overmix it to make it too fine! Refer to this video! This will result in a very flaky pastry because of the cold butter blocks trapped between the flour. ★ You don’t have to use specifically Bon Bon grape juice! Any other grape soda or grape juice works too. Try Ribena maybe! ★ If you can’t find maltose sugar for the grape filling, you can try and substitute it with 20g of cornflour/cornstarch. This will thicken up your filling. I haven’t tried it before but it might end up even better because it has a more liquid state bursting out of the pies when baked! ★ When you’re pressing down your pie lid, make sure you do it on a flat surface so the pie isn’t domed. ★ When you’re pressing the pie down with a fork, really press hard with it as you want to seal the pies completely, or else the filling will leak. If your pastry crust is done properly, the edges will puff up significantly as well. ★Demerara sugar is KEY to this crispy hand pie. The sugar doesn’t melt and creates this crunchy top on top of your already flaky pastry. ★I purposely left some Bon Bon grape juice leftover in the can so we can all drink some on it’s own.
