(about 1 minute per side) Remove the shrimp with a slotted spoon and add in some butter and oil. Next, add in your shallot and garlic and cook for 2-3 minutes. Deglaze the skillet with dry white wine or chicken stock and bring to a boil. Reduce the heat to a simmer and cook off the alcohol for 3-4 minutes. Cook pasta to package instructions and strain (keeping 1-2 cups of salted pasta water). Add your noodles to the sauce and toss to coat. Add pasta water as needed. Season to taste and add back in your shrimp to finish cooking. Add chopped parsley, lemon juice, and lemon zest to taste. Garnish with parsley and red pepper flakes.
