Oregon State University Beer Quality Analysis Series teaches the science of beer

https://workspace.oregonstate.edu/bee... Once you understand how to brew beer, how do you ensure the beer you're making is in control? That you're able to hit the alcohol levels you want, you're able to get the yields you want, that things are consistent, and things are on target. But what if you don't really know what's going on? That could lead to inconsistency and poor quality, which can lead to consumers not coming back to your brand. The Beer Quality Analysis program at Oregon State University provides a large tool that brewers can use to ensure the success of their business. One of the unique things about this program is that it provides insight into the analytical techniques that brewers use to ensure the beer and all the processes along the way are in spec and ensure that you produce a product that is consistent and high quality. And then on the back end, how do you evaluate beer from the sensory perspective, how do you test for defects and ensure your beer is true to spec? You'll find other courses around the nation around the world that teach students about the overarching beer process from raw materials to finish packet goods and quality to be a part of that, but this course is specifically tailored to Quality, specifically tailored to the lab aspects of that from a chemistry biochemistry microbiological and sensory perspective and that is really a unique feature of this course. The OSU PACE Beer Quality course is designed really for two audiences. One, those people that want to break into the industry and need to understand more about beer quality, and two, those that are working in the industry and see themselves either moving to or having been moved into a realm where they need to be very in touch with quality systems and quality measurements control. And part of what we're training the students is to be able to know what systems to monitor throughout the brewing process and be able to track that and understand when the system is in control and out of control. If it's in control that leads to consistency When you're home brewing it's very tactile it's very small you can manipulate things quite easily and then when you go to a commercial scale. You can't you're relying on pumps uh sensors control systems that are much more complex than just buckets and pans this course helps with that. By the end of the training, you will know: How to collect the appropriate data The techniques you need to collect the data How to measure extract and extract yield and extract quality What to do with the data when you collect it How to make sure that the data are valid, and that you have appropriate controls How to evaluate beer from a sensory perspective How to understand that there aren't defects How to test whether there are defects How to test whether the beer is true to spec or not true to spec This beer quality training course is a really safe space to learn and play and ask questions without being any sort of judgment that is like you know an open book that they can page through and talk to experts. So, the Beer Quality course consists of five to six weeks of online content and we go through a whole range of different analytical techniques that brewers need, and these are the techniques that the brewing industry has told us are the important ones that people working in quality need to to know. You'll learn the techniques established by the American Society of Brewing Chemists (ASBC). These are standard methods that you would use for measuring a whole range of different beer quality measurements. We work the students through the brewing process looking at production and fermentation and finished beer analysis and sensory. And so students see it from end to end the key elements of quality measurements, how those measurements were established and why they were established, and how those techniques had performed. What we hope that the students come away with is an understanding of the suite of tools they have in front of them, and the techniques that the brewing industry has told us are important.
