A few months ago, we had the pleasure of spending time with Fred Berkmiller, owner and chef of L'Escargot Bleu, whose love for traditional French cooking and gardening has flourished into a wonderful business. Located on Broughton Street, Edinburgh, Fred has been running L'Escargot Bleu for nearly 20 years and has been serving classic French dishes at the restaurant & offering true hospitality in a charming environment. Fred grew his passion for gardening when he struggled to source the best fruit & vegetables for his customers. So in the last 7 years, he decided to start growing his own after finding it hard to source healthy, good-looking and tasty vegetables. He does this in his 1200 square metres of garden, where he grows a wide variety of vegetables, salads, herbs and a few fruits to use in his restaurant with the help of our Kelpie Compost from Caledonian Horticulture.
