In this video, I share a very old and traditional method of cooking and preserving meat without using a refrigerator — a technique that has been used for generations in the rural villages of northern Iran. My sister and I visited a mountain butcher located in the highland summer pastures, where sheep are butchered fresh every day and the meat is sold on the same day. When we arrived, heavy snow had fallen. After enjoying some time playing in the snow, we rented a small cabin, had lunch, bought fresh meat, and returned home.The next morning, I cleaned the house and washed the yard. Then, with the help of my mother, we lit a fire. I cut the meat into pieces along with a large amount of fat and placed it in a pot over the fire with some salt. Slowly, the fat melted, and the meat cooked and fried completely in its own fat. Finally, the cooked meat was placed into glass jars along with the melted fat. These jars can be stored for a long time in a cool room, storage area, or even buried in the ground. Whenever there is hot bread or rice, this preserved meat is added on top and enjoyed — a delicious, healthy, and nourishing food. In the past, this method was a main source of food for shepherds, especially when a sheep was injured and had to be slaughtered without access to refrigeration.
