In this video I show you how to make old fashioned bread and butter pickles using the open kettle canning method. Learn a new way to preserve all those delicious summer cucumbers! Bread and Butter Pickles Recipe NOTE: This is the open kettle method which is safe for some pickle, tomato, and jam recipes. Do not attempt to use the open kettle method for preserving other foods. You may also use this brine recipe to create a delicious refrigerator pickle. The concept of inversion is that the hot food helps to sterilize the seal (I also sterilize everything before starting) while creating a vacuum by allowing air to escape. I have always inverted jars for this recipe but it’s not necessary. After filming this video, I made a 2nd batch and didn’t invert. I actually preferred this because all the jars sealed and they weren’t as sticky. Ingredients About 13 cups of 1/8” sliced cucumbers ½ cup canning salt 1 Large Red Bell Pepper 1 Large yellow onion 4 cups distilled white vinegar 2.5 cups of sugar 2 TBS mustard seed 2 tsp turmeric 2 tsp celery seed 1 tsp ground ginger 2 tsp rough ground pepper or peppercorns 5-6 pint jars Directions: Slice cucumbers using a mandolin or by hand. Slice onion and red bell pepper into strips. I cut longer strips in half. Put sliced cucumbers, bell pepper, and onion in large bowl along with ½ cup of canning salt. Cover with cold water and stir the mixture to incorporate the salt. Place in the fridge for 4 hours. You can also put about 1 cup of ice in the bowl and let it sit on the counter. About 30 minutes before the 4-hour time frame is up, I like to prep my jars. Make sure your pint jars are washed and start heating them in the oven at 250 degrees. Your jars need to be HOT for the open kettle method to work properly. Also warm the lids in a pot on the stove. After 4 hours, drain cucumbers and do not rinse. Add all brine ingredients to the pot and heat the brine to just before boiling. Add cucumbers to the pot and heat them until steaming but don’t cook. This takes about 2 minutes. Stir constantly to even the heat. Turn constantly to even the heat. Working quickly, ONE JAR AT A TIME while leaving jars in the oven, ladle pickles with as little brine as possible and start filling your jar. Using the “debubbler” tool, pack the cucumbers in the jar. Once you reach the ½ inch headspace mark with pickles, pack down and top off with brine to reach ¼ inch headspace. You may need to turn down the heat on the stove at this point so the pickles do not start to boil. Debubble jars and top with more brine as needed. Wipe rims with white vinegar using a clean cloth/paper towel. You need vinegar to remove the sticky brine from the rim. Place rim on the jar. Unlike other canning methods you want to screw the ring on tight! Because the jars are hot, you will need to use a glove on at least one hand. Screw tightly and flip upside down for 5 minutes. After 5 minutes you can turn them over. Any jars that haven’t sealed at this point should seal within just a few hours. If for some reason one of your jars doesn’t seal just put it in the fridge. After jars have completely cooled and sealed, wipe them well with water. I always (very gently) test the lid to make sure it sealed and then I’ll gently wash with cool running water and a clean cloth. Wait 2-weeks before opening.
