Mixing & seasoning ❤️ Stir-fried pork with pickled cabbage and tofu recipe – Simple Taiwanese Cuisine with Lady First Servings: 5 💛Main Ingredients: 300g ground pork 300g pickled Chinese cabbage --The pickled Chinese cabbage is made with 2% non-iodized salt water --You can substitute with pickled napa cabbage 1 block of firm tofu 3 green onions 3 cloves of garlic 1 mild hot pepper Looseleaf lettuce (optional) 💛Seasonings: 2 tbsp low-sodium soy sauce 1-2 tbsp spicy bean sauce or chili bean paste 1.5 grams salt 50cc oil 2 tbsp water 0.5 gram MSG (optional) 💛Pickled Cabbage Making: Mix 20g of iodine-free salt into 1000 ml of water to make saltwater. Do not use salt with iodine, as it will cause the cabbage to turn black. Cut the cabbage into halves or quarters and put them into a large glass jar. Pour in the saltwater and use a small plate or other weighted objects to fully submerge the cabbage in the water, as the cabbage will turn black when exposed to air. The blackened parts can be removed. Place the jar in a cool place for 3-4 days, or up to 1 week in cooler weather. Bubbling during fermentation is normal. Do not change the water during the process. When the water turns cloudy white, it is matured. Take out a little to test the acidity by rinsing it with drinking water and tasting it. If the acidity is not satisfactory, let it sit for a few more days. Once the acidity is satisfactory, take out the cabbage, press it dry with clean hands (or with gloves), and store it in a sealed container in the refrigerator. It can be kept fresh for about 2-3 weeks. Use as needed for cooking. ❤️Main Tool: 💛Wok ❤️ Stir-fried pork with pickled cabbage and tofu recipe – Simple Taiwanese Cuisine with Lady First 👉1. Stir-fry the pork: Saute garlic in 50cc of oil, then add the minced pork, 1 gram of salt, 1 tbsp of light soy sauce, and 1 tbsp of spicy bean paste. Stir-fry until cooked, then remove from the wok and set aside. 👉2. Stir-fry the tofu: Cut the tofu into small dices and add them to the wok. Mix 1 tbsp of light soy sauce, 0.5 grams of MSG (optional), 0.5 grams of salt, and 1 tbsp of spicy bean paste. Add 2 tbsp of water and stir-fry until cooked. 👉3. Combine and season: Add the cooked pork back into the wok along with the pickled cabbage (or pickled napa cabbage). Stir-fry with scallions and chili pepper.
