Karambit knife has ~5x damage of normal one - otherwise, fight would take way too long. No Speed/HP/Block bonuses from food. Sturm is relatively simple boss. He has 2 states - normal and on fire. He gets on fire after getting to about 65%, 35% and 15% of total health. First fire lasts for about one minute, second one - around 100 seconds. Third one.. I didn’t count, sorry, normally you kill him before it expires. For knife users there are 2 good opportunities to hit him - when he’s not on fire, just get him to hit any wall, come to him form one of the sides and stab once, then move a bit to his other side, as he turns around and stab him again. That deals damage equal to 3 slashes, and sometimes you may even get double stab with a single hit. 2nd opportunity - when he’s on fire and uses “fire breath” - just wait for him to turn in direction that will make him set aflame less ground, then go behind him - then you can stab him up to 5 times in a row, not counting possible doubles. And, ofc, it’s important to break all or most walls before he catches fire for the first time, then you can dodge better. You have 30 stabs before he does, so it’s ~15-25 of his attacks - or even more if you’re being careful. Not very strict. If he sets ground on fire, that doesn’t last forever either - with time everything calms down. And that’s it. This boss is almost as repetitive as Moreau - but, to be fair, is a lot more tactical and fun.
