Customers requested him to sell biryani too on Sundays. What began as a tiny 2-kilo experiment 21 years ago has grown today to a massive kitchen that sells nearly a thousand kilos of mutton biryani on Sundays. And in doing so has placed Hoskote on the map for biryani lovers who don't seem to mind waking up at an unearthly hour just to get here to stand in a queue for an hour or two for a plate of the fabled Hoskote biryani that runs out by 9am and is sold only on Tuesdays, Fridays and Sundays. I drive out to Hoskote at 4am to find out what makes this biryani such a craze. Every grain of rice is imbued with its flavours, and the meat is a combination of some soft, juicy pieces and some on the bone, that calls for a bit of effort to get to every bit of it, some fat included.
