Facebook Fan page: / allnigerianrecipes Ingredients -700g African Breadfruit (Treculia Africana) Aka Ukwa in Igbo. -2 medium dry fish -2 small stock cubes -7g edible potash -Palm oil (enough to colour) -5-6 Bitter leaves -Pepper & Salt (to taste) If I am cooking the breadfruit porridge with a normal pot I would: 1. Soak the breadfruit overnight 2. Wash and put in a pot, pour water to cover it like in the video. 3. Add potash, dry fish and stock cubes. 4. Cover and cook till the ukwa is very soft. 5. Add salt, pepper and palm oil and cook till the palm oil turns yellow. 6. Add the bitter leaves, leave to simmer till the leaves wilt then stir and serve. Notes: 1. Ukwa also tastes great when cooked plain without any other ingredient, not even salt. I actually prefer it that way especially when prepared with fresh ukwa. 2. You may think that with the pressure pot we do not need the food tenderizer but that is not the case. I tried cooking the ukwa without potash, it was done within 1 hour but I did not like this because the ukwa was not soft. It did not make a nice porridge. A pressure cooker may do a nice job with fresh ukwa (without potash) but I have not tried it. Settings for my pressure cooker: The make of my pressure cooker is Fagor. When cooking the breadfruit I set the pressure to 1 and my cooker heat to 7 (my cooker heat ranges from 1 to 9) then cook the ukwa for 30 minutes.
