This delicate and airy Cloud Cake is a delightful treat with a light, jiggly texture! Ingredients 3 eggs, separated 1 cup yogurt (250 grams) 1/3 cup sugar (65 grams) 1/4 cup cake flour (35 grams) 10 grams cornstarch (1 1/4 tbsp) Salt, a pinch (1/8 tsp) 1 tsp lemon juice (5 ml) 1 tsp vanilla extract (5 ml) Icing sugar for dusting Recipe 1. Preheat your oven to 300°F (150°C). Prepare a 6-inch cake pan by lining it with parchment paper. 2. In a mixing bowl, beat the egg yolks with yogurt until well blended. 3. Add 1 tsp lemon juice, vanilla extract, and a pinch of salt. Mix until well combined. 4. Sift the cake flour and cornstarch together and add to the mixture. Mix everything until well combined. 5. In another bowl, beat the egg whites until foamy. 6. Gradually add the sugar to the egg whites, beating until stiff peaks form. 7. Gently fold the egg whites into the egg yolk mixture in batches, ensuring to maintain the airy texture. 8. Pour the cake batter into the prepared cake pan and remove any air bubbles with a toothpick. 9. Place two cake pans and pour hot water into the larger pan for a water bath. Put the cake pan in the top pan. 10. Bake at 300°F (150°C) for 20 minutes. Then reduce the heat to 285°F (140°C) and bake for another 40 minutes. If you want the top a little golden, broil for 1-2 minutes @300°F. 11. Let the cake cool down slightly before removing it from the pan.
