EASY VEGAN BUDGET MEALS// DAY OF EATING FOR LESS THAN £5

Hi guys! Thank you so much for joining me for another video! See below all the recipes and links: Baked Oats Serve 1 - £0.87 pp Ingredients: 1 cup of oats 2 very ripe banana 1/2 tsp of baking powder 1/2 cup + 1/4 cup of plant milk handful of chopped walnuts handful of berries Add the oats, plant milk, banana and baking powder to a blender. Blend until smooth and creamy. Pour the mixture into a baking dish and sprinkle with the berries, sliced banana and walnuts. Bake in the oven at 200 degrees celsius for 30 minutes.Remove from the oven and enjoy! Walnut & Mushroom Ragu: Serve 4-5 - £1.43 pp Ingredients: 1 white onion - finely chopped 1 carrot - finely chopped 2 garlic cloves - crushed 250g of mushrooms - finely chopped 100g of walnut - roughly chopped 400g of tomato passata 1 tbsp of dried herbs 1/2 tbsp of chilli flakes pasta of your choice to serve Add a drizzle of oil to a large pan. Once hot add in the onion and carrot. Cook for 10 minutes then add in the crushed garlic, cook for another minute. Add in the chopped mushrooms and cook for 10-15 minutes until the mushrooms have shrunk in size. Add in the tomato passata and the equivalent of water. Stir and let it bubble on a low heat for 20 minute until you have a thick sauce. Add the chopped walnuts to a dry pan and toast them for 5 minutes until fragrant. add the toasted walnuts to the sauce, stir to combine. Add the ragu to the pasta, mix everything together and enjoy! Tofu Scramble & Veggie Rice Serve 1-2 - £1.04 pp Ingredients: 1 carrot - chopped 1 onion - chopped 200g of broccoli 1/2 block of tofu (about 150g) 3 -4 cups of cooked rice (I used brown basmati) 2 tbsp of soy sauce 2 tbsp of nutritional yeast 1 tsp of garlic powder 1 tsp of ground turmeric a generous pinch of black salt or normal salt 1 tbsp of toasted sesame seed oil for frying Serve with: Add the oil to a large frying pan and once hot add in the chopped vegetables. Cook on a medium heat for 5-8 minutes then add the soy sauce and cook for another 5 minutes. In the meantime in a pan crumble the tofu then add the nutritional yeast, garlic powder, turmeric and black salt. Mix everything together. Add a dash of plant milk and cook for 5-10 minutes until fluffy. Add the frozen broccoli to the veggie and a dash of soy sauce. Cook for 5 more minutes. Add in the rice and mix everything well. Cook for 1-2 more minutes until the rice is heated through. Serve the veggie rice topped with the tofu scramble. Buy my ebook: https://www.happyskinkitchen.com/prod...
