Unlike most ice creams made ahead of time in an electronic ice cream machine, rolled ice cream—also known as stir-fried ice cream—is made to order by hand. According to Forbes, street vendors in Thailand, Malaysia, Cambodia, and the Philippines can whip up this frozen treat in about 2 minutes. The ice cream is made by pouring a base of sweet milk on an extremely cold (-35°C) steel surface that resembles a pizza pan to Westerners. Paint scrapers or metal spatulas are then used to chop toppings into the base and scrape it around to create air. Once the base is frozen solid, it is spread thinly and scraped at an angle to create the magnificent rolls of ice cream. The rolls are then placed carefully in a cup and topped with items like whipped cream, chocolate sauce, and fresh fruit. Around 2011–2012, the ice cream became more popular in Thailand and began to spread to neighboring countries such as Malaysia, and Cambodia in 2012. It spread worldwide in 2015 from internet viral videos. Stir-fried ice cream, or "ice pan" ice cream, is a dessert made on a steel plate chilled to below freezing. A choice of soy or dairy milk is poured onto the cold plate and mixed with fruit, green tea, coffee or other ingredients. The mixture is chopped and stirred while crystallizing, until creamy.[3] Cold Stone Creamery, an ice cream parlor chain in the US, sells a similar product which involves combining ice cream with various toppings on a frozen granite stone. Ingredients and recipe[edit] Stir-fried ice cream is made with a milk base combined with various fresh ingredients and different toppings served with the ice cream. The main ingredients are the liquid base flavour which is commonly milk, or soy milk. Fresh fruit or other choices such as chocolate, green tea, or red beans are blended with the milk, while sometimes extract powder or syrups are used to create the flavour.[4] To make stir-fried ice cream, the mixture is first poured into a −18 to −35 degree C metal pan. The ice cream masher uses two metal spatulas to mix and stir the mixture, which freezes and solidifies. The masher will add and grind different toppings like nuts, chocolate chips, and fruits to increase the texture of the ice cream. By continuously mixing and stirring in the cold pan, a scoop of stir-fried ice cream is created. The stir-fried process has to be quick and instant with only 5–10 seconds used to create the texture of ice cream. The ice cream can be piled for scooping or smoothed flat for scraping into curls and served in paper cups in Thailand.
