MORE RECIPES Minced Meat (TVP) Ingredients *Soaking 300g TVP (dried minced soy) 1/2 tbsp organic soup blend (optional) 1 tsp Ras el hanout 1/2 tsp salt 2 tsp liquid smoke (optional) 2-3 tbsp low sodium soy sauce 1/2 tbsp smoked paprika Hot water *Frying 1/4-1/3 cup low sodium soy sauce 1/2 cup tomato sauce (passata) 2 tbsp liquid smoke 1 tbsp Ras el hanout More smoked paprika to taste (optional) *Other Olive oil (for frying) Method 1. Add the TVP, spices, and hot water to a large bowl, mix, and set aside for an hour. 2. Drain, rinse, and transfer to a cheesecloth. Squeeze until almost no liquid is coming out. 3. Heat olive oil in a wide pan over medium-high heat. Add the drained TVP. 4. Fry for 10 minutes until you see the granules start to brown, then add the frying spices and liquids. Fry for another 10-15 minutes, adjusting the spices as needed. Miso Glaze Ingredients 1/3 cup olive oil 1.5 tbsp maple syrup 2 tbsp light miso paste 1 tsp salt 1 tsp Ras el hanout 1 tsp smoked paprika *Others (optional) More olive oil Rosemary branches Method 1. In a small bowl, whisk together all the ingredients until well combined. 2. Apply to veggies and bake. In the video, I used it for: Sweet potatoes: 2 large sweet potatoes, sliced and brushed inside. Baked for 40 minutes at 200ºC (400ºF). Mushrooms & zucchini: 200g mix of king oyster and champignon mushrooms, plus a large zucchini.
