It finally got to Chicago! Casimir, from Barradères (on the Tiburon Peninsula in Haiti), is the unfortunate clairin that got pulled from the shelves in the US two years ago - but now it's back for a proper review. This 2018 vintage is from Hawaii cane juice, wild fermented and then pot distilled by Faubert Casimir at a strength of 51.4% ABV. Apparently Faubert likes to add "herbs or vegetable matter" to his juice as it ferments, which is pretty nifty. The result, from my experience, rivals the Le Rocher '18 in approachability while still retaining the herbal cane juice edge of something like Vaval '17. (The aged Casimir I reviewed awhile back, needless to say, is nowhere near this.) Unlike some of the other clairins, however, it doesn't seem to like water much - but it's still excellent (89/100), so you're absolutely cleared to buy it.
