Buy me a coffee if you enjoy this channel. https://www.buymeacoffee.com/southern... https://www.patreon.com/user?u=82041551 Crust 2 c crushed graham crackers 1/2 c butter, melted 1/4 c sugar Filling 6 tbsp fresh key lime juice 1 envelope of unflavored gelatin 2 1/2 c heavy whipping cream, divided 10 (1 oz) squares of white chocolate 3 (8 oz) packages of cream cheese, softened 1 c sugar 1 1/2 tbsp lime zest Garnish: white chocolate curls, key lime wedges Butter, sugar, and graham cracker crumbs should all be combined in a medium basin. In a 10-inch springform pan, press into the bottom and 1 inch up the sides. Place aside. Lime juice and gelatin should be combined in a big basin and left to stand for two minutes. In a small saucepan, boil 1/2 cup of cream. Remove the form head, then whisk in the white chocolate until it is smooth. Add the gelatin mixture after letting it cool. Cream cheese, sugar, and lime zest should be blended by mixing them with an electric mixer at medium speed in a big basin. Blend the cream cheese mixture into the cooled white chocolate mixture gradually. The remaining 2 cups of cream should be beaten with an electric mixer at high speed until soft peaks form in a large basin. Pour into pie shell after folding into white chocolate mixture. Overnight freezing with a cover Take the pan out of the freezer, then carefully run a knife over the pan's edges to loosen the crust from the sides. If desired, garnish with key lime wedges and white chocolate curls. Using a knife that has been in hot water, slice into wedges. Use bottled juice if fresh key limes are not readily available. History The history of Key Lime Cheesecake can be traced back to the 1800s when Key Lime pie was first created in the Florida Keys. The key Lime pie was a staple for the sponge fishermen who worked in the Keys as it was a quick and easy dessert made with ingredients readily available on their boats. The pie was made with a graham cracker crust and a filling of condensed milk, egg yolks, and Key Lime juice. In the mid-1900s, cheesecake became popular and the Key Lime version was created by combining the traditional Key Lime pie filling with a creamy cheesecake. This new dessert quickly became a popular choice in restaurants and bakeries, especially in the Florida Keys. Over the years, the recipe for Key Lime Cheesecake has evolved and many variations have been created, including those with a graham cracker crust, shortbread crust, or even a gingersnap crust. Some recipes use regular lime juice instead of Key Lime juice, while others use a combination of both. Some recipes also include a topping of whipped cream or a glaze made with Key Lime juice and sugar. Regardless of the variations, Key Lime Cheesecake remains a popular dessert and is a staple in many American bakeries and restaurants.
