In this video, we show you a super delicious Vitumbua recipe that you can make even if you don't have a Vitumbua pan. Vitumbua's are coconut rice pancakes that are famous in Tanzania and Kenya. They are one of our family's favourite tea-time snacks and are bursting with that sweet coconut flavour. Traditionally, Vitumbua are ball-shaped and made in a special pan that gives them their distinct shape, however, many people put off making these special treats since they feel they don't have the pan to make it in. In our recipe, we have shown you that you can still make the Vitumbua Recipe using a small rounded vessel. They will be slightly flatter than the traditional Vitumbua, however, they have that exact same sweet coconut taste! For this Vitumbua Recipe, you will need: 1 cup rice soaked overnight (we used broken basmati rice but you can use long grain too) 1/2 cup sugar 1 sachet year (7g) 5-6 green cardamom pods 1 cup coconut milk Blend all the ingredients together until it forms into a smooth mixture without any grains. Put into a large bowl, cover, and leave aside for a couple hours until it has doubled in volume. This Vitumbua Recipe is very easy to make and so delicious. No wonder it is so popular in East Africa.
