Hello everyone, Chinese New Year 🧧 is coming very soon, I would like to show you guys how to make this easy and simple sweet rice cake recipe called Baked Coconut Sweet Rice Cake. This cake tastes very crispy on the outside and soft and chewy on the inside. The best thing about it is you don’t need to steam or pan-fry like the traditional sweet Rice cake. Just eat it hot or in room temperature. Ingredients Glutinous rice flour 1 lb (16 oz) Baking powder 1 tsp Coconut milk 1 can (13.5 oz or 400 ml) Milk 1 cup (8 oz or 250 ml) sugar 1 cup (200 g) Unsalted butter 4 oz (113.39 g) 3 large Eggs Dried coconuts Olive oil Tools: 3 aluminum trays (8.5" x 6" x 1.5") or One 8" round cake pan Instructions 1, Combine Glutinous rice flour, Baking powder, Coconut milk, Milk, and melted unsalted butter. Mix well together. 2. Add in the eggs and sugar and mix well together. 3. Grease the baking pan with oil 4. Pour the batter into the pan to 3/4 full cause it will rise when baking. 5. Sprinkle some dried coconut on top 6. Bake it in the pre-heated oven at 350 degrees F for 45 mins until golden brown color. I hope you guys will enjoy my video today.
