Black glutinous rice, also known as forbidden rice is high in antioxidants, iron and vitamin E. It also has a higher content of protein than any other rice variety, rich in fiber and nutrients. Black rice is also a superfood that benefits the body. The cooked rice is chewy and nutty in flavor. Here, I am using black rice produced in Manipur, India. Serves 4 Ingredients : 1 cup - 200gm black glutinous rice, washed and soaked in water for 6 hours* 2 cups - 500 ml water 1 cup - 250ml thick coconut milk 1/2 cup-80gm organic jaggery**/brown sugar/coconut sugar/sugar 1/4 tsp salt 4 tbsp thick coconut milk 1. Cook the drained rice in 2 cups of water over medium flame. 2. When the water is reduced, add 1 cup of coconut milk,stir it, and lower the flame. Cook until the liquid is nearly absorbed. 3. Add the jaggery and salt, stir to dissolve the jaggery. Turn off the flame when the mixture thickens. Let it cool down. 4. Serve by drizzling a tbsp of the thick coconut milk. Soaking the rice reduces the cooking time. The rice can be cooked without soaking too. ** I used jaggery, sugar can be used instead. Do subscribe, like and share this recipe.
