Winter season makes us crave something warm, comforting, and home-style for dinner. In this video, I’m sharing a complete winter dinner idea – Veg & Egg Dal Tadka with a 100% Healthy Vegetable Soup, made using simple ingredients and easy steps. This recipe is perfect to enjoy with roti at night, and it includes both veg and egg options, so everyone can enjoy it. 🫘 INGREDIENTS – MIXED DAL TADKA ⚪️For Dal (soaked): ●Green moong dal – 2 cups ●Rajma – 1 cup ●Chana dal – 1½ cups ●Water – 6 cups (for pressure cooking) ●Salt – as required ●Turmeric powder – ½ tsp ●Red chilli powder – 1 tsp ●Green cardamom – 2 ●Cloves – 2 ●Cinnamon sticks – 2 small ⚪️For Gravy: ●Onion – 3 (chopped) ●Tomato – 3 (chopped) ●Garlic – 2 tbsp (chopped or grated) ●Ginger – 1½ tbsp (chopped or grated) ●Green chillies – 2 (slit) ●Mustard oil – as required (or refined oil) ●Cumin seeds – ½ tsp ●Coriander powder – 2 tsp ●Cumin powder – 1½ tsp ●Red chilli powder – 1 tsp ●Turmeric powder – 1 tsp ●Black salt – 1 tsp ●Fresh coriander leaves – for garnish ⚪️For Egg Tadka (Optional): ●Eggs – 3 ●Salt & black salt – to taste ●Oil – for scrambling ⚪️For Special Tadka: ●Ghee – 2 tbsp ●Garlic – chopped ●Kasuri methi – a pinch ●Kashmiri red chilli powder – for colour 🍳 STEPS – MIXED DAL TADKA 1.Soak green moong dal, rajma, and chana dal overnight or for 5–6 hours. 2.Add soaked dal to a pressure cooker with water, salt, turmeric, red chilli powder, and whole garam masala. Cook for 3–4 whistles until soft. 3.Heat mustard oil in a kadai. Add cumin seeds, garlic, ginger, green chillies, onions, and sauté until light golden. 4.Add tomatoes and salt, cook until soft. 5.Add coriander powder, cumin powder, red chilli powder, turmeric, and black salt. 6.Add boiled dal, mix well, and adjust water and seasoning. 7.Divide the dal into two parts – one for veg and one for egg. 8.For egg tadka, scramble eggs with salt and black salt, then mix into one portion of dal. 9.Add chopped coriander leaves and garam masala powder. 10.Prepare special tadka with ghee, garlic, kasuri methi, and Kashmiri red chilli powder, and pour over both veg and egg tadka. Serve hot with roti, onion, green chilli, and lemon. 🥣 INGREDIENTS – HEALTHY VEGETABLE SOUP ●Beans – 6–7 (chopped) ●Green peas – small amount ●Sweet corn – small amount ●Carrot – 1 (chopped) ●Spring onion – small amount ●Yellow & red bell pepper – small amount ●Capsicum – small amount ●Cabbage – small amount ●Garlic – ½ tbsp (chopped or grated) ●Ginger – less than garlic ●Onion – 2 (chopped) ●Ghee – 1 tbsp (or refined oil) ●Soya sauce – 1 tbsp (optional) ●Lemon juice or vinegar – to taste ●Salt – as required ●Black pepper – 1 tsp ●Oats powder – 3–4 tbsp ●Water – as required 🥄 STEPS – HEALTHY VEGETABLE SOUP 1.Heat ghee in a kadai on medium-low flame. 2.Add garlic and ginger, sauté gently. 3.Add onions and cook until soft. 4.Add all chopped vegetables and cook lightly (do not overcook). 5.Add soya sauce, lemon juice or vinegar, salt, and black pepper. 6.Add water and bring to a boil. 7.Mix oats powder with water to make a thin slurry and add to the soup. 8.Adjust salt and add a little sugar if needed (optional). 9.Cook for 3–4 minutes until slightly thick. Serve hot and enjoy on a winter night.
