It was a calm and sunny day in our Mazandaran home 🌞 Birds were singing, and a little one had built its nest in our flower pot 🕊️ That’s when I decided to cook one of our most loved Persian dishes — Ghormeh Sabzi, Mazandaran-style, made with black-eyed peas and fresh northern herbs 👩🍳💚 For this dish, I used fresh herbs that we had already cleaned, chopped, and frozen from our garden. When the herbs meet the hot oil, the whole house fills with the heavenly aroma of nature and home 🌿 I sautéed golden onions, added local lamb meat, and seasoned it with aromatic spices. Then came the beautiful black-eyed peas, which give this dish its unique Mazandaran flavor. We let it simmer slowly for a few hours so all the flavors could blend perfectly 🍲 In the final half hour, I added dried limes and the rich, fried herbs we had prepared earlier. When it’s ready, the color turns deep green, the oil comes to the top, and the taste — is pure magic that brings the whole family around the table 💛 My sister, brother-in-law, and nieces joined me for lunch.
