Anda Chingari Recipe Ingredients: • 3 eggs (تین انڈے) • 3 boiled eggs, cut into four pieces each (تین ابلے ہوئے انڈے) • 1 onion, finely chopped (ایک باریک کٹی ہوئی پیاز) • 2 tomatoes, finely chopped (دو باریک کٹے ہوئے ٹماٹر) • ½ cup boiled peas (آدھا کپ ابلے ہوئے مٹر) • 1 tablespoon ginger-garlic paste (ایک چمچ ادرک لہسن کا پیسٹ) • ½ cup green coriander, chopped (آدھا کپ سبز دھنیا) • ½ teaspoon salt (آدھا چائے کا چمچ نمک) • ½ teaspoon red chili powder (آدھا چائے کا چمچ سرخ مرچ پاؤڈر) • ½ teaspoon turmeric powder (آدھا چائے کا چمچ ہلدی پاؤڈر) • ½ teaspoon garam masala powder (آدھا چائے کا چمچ گرم مصالحہ پاؤڈر) • ½ teaspoon cumin powder (آدھا چائے کا چمچ زیرہ پاؤڈر) • ½ teaspoon dry coriander powder (آدھا چائے کا چمچ سوکھا دھنیا پاؤڈر) • ½ teaspoon chaat masala (آدھا چائے کا چمچ چاٹ مصالحہ) • ½ teaspoon whole cumin seeds (آدھا چائے کا چمچ زیرہ) ________________________________________ Preparation: Step 1: Prepare the Eggs 1. In a bowl, whisk 3 eggs with a pinch of salt and some chopped green coriander. 2. Heat 2 tablespoons oil in a pan and fry the eggs like an omelette. 3. Once cooked, remove and set aside. 4. Cut each boiled egg into 4 pieces and set aside. ________________________________________ Step 2: Prepare the Masala 1. In the same pan, add a little more oil if needed. 2. Add whole cumin seeds and fry until fragrant. 3. Add chopped onions and sauté until soft and light golden. 4. Add ginger-garlic paste, mix well, and fry for 1 minute. 5. Add chopped tomatoes and all the powdered spices (salt, red chili powder, turmeric, garam masala, cumin powder, dry coriander powder, and chaat masala). 6. Mix well and cook until the oil separates from the masala. ________________________________________ Step 3: Final Cooking 1. Add ¼ cup water and mix well. 2. Cover the pan and cook on low flame for 2–3 minutes. 3. Remove the lid, add boiled peas, and mix. 4. Add the fried eggs (omelette pieces) and boiled egg pieces, and gently mix everything together. 5. Sprinkle chopped green coriander on top. 6. Cover and let it simmer for 1 minute. 7.
