These donuts are delicious and soft. This recipe is simple to make and versatile. You can use this recipe for making muffins or a quick bread as well. I use Bob’s Redmill’s Gluten-Free 1 to 1 flour blend, but you can use regular all-purpose flour if making a regular version. Make 2 dozen donuts. Ingredients: 2 apples, any kind, peeled, cored, and diced (about 1 cup) 1 cup 100% apple cider 1 cup (2 sticks) unsalted butter, melted 1 cup sugar 2 large eggs 1 tsp vanilla extract ½ cup cottage cheese/buttermilk/milk/sour cream, any is fine 3 cups gluten-free 1 to 1 flour blend or all-purpose flour (more or less) 1 tsp baking soda 1 tsp baking powder ½ tsp salt 1 tsp cinnamon ½ tsp nutmeg Coating or glaze: ½ cup sugar 1 pk. Apple Cider Drink Mix 1 tsp cinnamon OR Caramel glaze, etc. (I use a store-bought caramel dipping sauce, and warm it for 30 seconds in the microwave) Method: 1. In a saucepan, cook the apple in the apple cider for about 5 minutes or until the apple is tender. Set aside to cool down. Puree the mixture in a blender. 2. In a mixing bowl, mix melted butter and sugar, eggs, vanilla, and the prepared apple puree. 3. Add all of the dry ingredients: GF flour, baking soda, baking powder, salt, cinnamon, and nutmeg into the wet mixture. Mix well until combined. 4. Mix in cottage cheese or buttermilk. The ½ cup may be adjusted depending on the consistency of your batter. If it is too thick, add more liquid, or if it is too loose, add less. Note: The batter should be the same as a quick bread or muffin batter
