Stir over medium heat until all the monk fruit is dissolved. Add the vanilla and simmer for about 5 minutes. Cool down and keep in the fridge for up to a month, in a closed container. Chocolate Sugar Free Simple Syrup 1 cup water 1 cup monk fruit 2 TBS dark chocolate Mix the monk fruit and water in a small pan. Stir over medium heat until all the monk fruit is dissolved. Place the cocoa powder in a small bowl and add a couple tablespoons of the hot liquid. Mix until you have no lumps. Add the chocolate to the syrup and mix. Simmer for a few minutes.
