Bell and long peppers contain other vitamins and minerals like vitamin K1, vitamin E, vitamin A, folate and potassium that are found in substantial amounts. Some extra health promoting antioxidants like capsanthin, violaxanthin, lutein, quercetin, and luteolin are also present in this vegetable. Pepper is a vibrant and colourful vegetable that can accompany many popular dishes (pizza, tacos, salads, etc. …) or be enjoyed on its own. We share here a simple and easy recipe of roasted bell and long pepper. Take a few peppers of your choice and cut them into pieces. Brush with some olive oil and put under the broil until the skin is dark brown (depending on your broil, it takes between 20 and 30 minutes). Let them sit inside the oven for an extra 15 ~ 30 minutes then take off the skin that should come out easily, then. Prepare a healthy vinaigrette with olive oil, apple cider vinegar, salt, pepper and chilli flakes. Drizzle the preparation on the top of pepper chunks and enjoy! Ingredients: 2 large bell peppers 6 long peppers Some olive oil For the vinaigrette: 3 cloves of garlic 2 tbsp. olive oil 2 tbsp. apple cider vinegar Pinch of salt Black pepper Pinch of chilli flakes
