Today, I’m making an Iranian dish called Dizi or Abgoosht! 👊😜🥰 It took a bit of time, and in the middle, I even made a hookah, which you’ll see in the clip 🤪😜 To prepare Abgoosht with Dizi, traditional clay or stone pots are used, giving the dish a unique and delicious flavor. Ingredients: • Lamb with bones (preferably neck or shoulder) • Chickpeas and white beans (soaked overnight) • Potatoes • Onion • Tomatoes or tomato paste, or both • Salt, pepper, turmeric, and desired spices • Lemon juice (optional) @ashpazbushi Preparation: Place the meat, chickpeas, and beans in the pot with chopped onion and turmeric. Add enough water to cover the ingredients. Put the pot over low heat and let it simmer slowly. This stage may take several hours until the meat and beans are fully cooked. After the initial cooking, add the potatoes along with tomatoes or tomato paste. Add salt, pepper, and other spices. Allow the ingredients to cook further until the stew thickens and the potatoes become soft. Add lemon juice (optional) towards the end. Serve Dizi with sangak bread, fresh herbs, and pickles. Use some broth for tilit (bread dipping) and mash the meat and beans separately to enjoy with bread.
